While everything I see here being cooked looks incredibly good, there was one thing I saw those bothers just a bit: a bit of cross contamination. The cross contamination came from when the cook was washing out the fry pan with water, and it splashed a bit in the hot water noodle bath to the left. There needs to be a Shield/Barrier between the fry pan and the hot water bath. Other than that, I would still eat there... my bucket list is to travel to Japan to spend a month finding good 'local' restaurants. This one looks pretty good to me.
Just imagine if the world goes 'Green' and natural gas is prohibited in Japan and China, like they're trying to do here in California... imagine how those in Japan or China would cook their dishes. Honestly, I cannot imagine it, and I think it is ridiculous to stop using natural gas for cooking.
I like that this place uses potato starch, not corn starch like here in the US. Hearty, no-frills deliciousness.
