What's not to love about a New York Cheesecake? It's creamy, it's tangy, it's smooth. Any why should you bake THIS New York Cheesecake? Because it has a full deep-dish Buttery Biscuit Crust, not just a base, and it has a caramelised topping with NO cracks. Really, this is the only New York Cheesecake recipe that you will ever need. For best results bake your cheesecake in a water-bath. But remember to wrap your tin in tin foil to keep any liquid from getting into your spring form pan. Try to use a dish that only just fits your cake tin inside - too much water will create too much steam and so your cheesecake will become very moist and will crack. If you can't use a water bath then add a small tin/oven proof dish to the bottom of your oven with an inch of boiled water in it to create steam and humidity. This is an easy to make Newyork style cheese cake recipe for beginners with minimal ingredients, yet tasty. Basic cheesecake recipe at home For printable written Recipe : 🤍 New York Cheese Cake Recipe Biscuits 15 to 20 Nos ( Gram Crackers or any other biscuit) Butter 4 tbsp melted (1/4 cup or 57 g) Cream Cheese 800 g (3 Cups ) Sugar 1 Cup (200g) Egg 4 Nos Vanilla Extract 1 tsp Bake over a water bath at 350 F / 180 C for 1 hr If you do not have cream cheese , this is how to make at home. 1 liter whole milk 2 teaspoons salt 4 tablespoon lemon juice or white vinegar In a saucepan, heat the milk on medium heat, stirring gently .One the milk start to boil reduce heat and Add lemon juice one tbsp at a time while stirring the milk . Start to Finish: 5 hours (includes cooling time) Prep Time: 30 minutes Servings: 16 Ingredients: Crust 1 1/2 cups graham cracker crumbs 1/4 cup of sugar 8 tablespoons butter, (1 stick) melted Filling 4 (8 oz) packages of cream cheese, softened 1 1/4 cup sugar 2 teaspoons vanilla 2 tablespoon lemon juice 5 eggs 2 tablespoons of flour Sour Cream Layer 1 pint of sour cream 1/3 cup of sugar 1/2 teaspoon vanilla 1 tablespoon lemon juice Garnish (optional) Fresh sliced strawberries Strawberry sundae syrup Whipped cream See my video for how to make home made Whipped Cream Directions: HEAT oven to 325°F. In a bowl mix graham cracker crumbs, sugar and butter, press onto bottom and slightly up the sides of 10-inch spring-form pan. Bake in oven for 10 minutes. While crust is baking, make the filling by beating the cream cheese, sugar, vanilla and lemon with electric mixer until smooth and well blended. Add eggs, 1 at a time, mixing at medium speed after each egg is added until all is blended making sure to scrape down the batter with a spatula. Add flour and mix until smooth. Remove crust from oven, but keep oven on and let the crust cool for 5-10 minutes then pour the filling over crust. Bake for about 50-55 minutes or until cake is cooked but has a slight jiggle in the center. Remove from oven, again keeping oven on and set aside for 5-10 minutes so it cools slightly while you make the sour cream topping. In a small bowl mix the sour cream, sugar, vanilla and lemon. Spoon over the top of the cheesecake and spread evenly. Put cake back in oven and bake for 10 minutes. Remove from oven and loosen cake from rim of pan with knife. Cool before refrigerating. Cover and refrigerate at least 3 hours or over night. Before serving, remove rim from pan and plate and slice cake. Garnish each slice with fresh strawberries and a drizzle of strawberry sundae syrup along with some whipped cream. Cooking Tips: Wrapping foil around the bottom of the pan helps to keep anything from dripping out while baking. It is best to store the cheesecake in the spring-form pan until ready to serve. The pan will protect it from getting bumped in the refrigerator. Slice cake using a hot, wet knife, wiping knife blade clean in between slices. Store leftover cheesecake in the refrigerator. Whipped Cream Cheese can be replaced for half of the recipe. I sometimes like to use 2 whipped and 2 regular 8 oz. packages. Other options for the crust: You can replace the Graham Crackers with Chocolate cookies or vanilla wafer, If making this recipe for Passover you can use crushed macaroons or crushed matzo for the crust in place of the Graham Crackers. If you need to replace the flour in the recipe you can use potato starch. See more tips at 🤍 Update August 2018 – Although it’s not in the video, I made a small tweak for a fluffier and even more amazing version of this just this weekend when my son came back home from NYC: change the ingredients for the main cheesecake filling so that you add a bit more sugar (1 and 1/3 cup of sugar instead of 1 and 1/4 cup) and add 1 cup of sour cream. Amazing tweak!

NY Cheesecake in 60 seconds Recipe: (23cm springform pan) Crust: 400g graham crackers (Digestive) 30g (3/8 cup) sugar 150g (1.5 sticks – 2/3 cup) butter 3g salt (Large pinch) Filling: 675g (3 cups) cream cheese 225g (1 cup) sugar 90g (almost ½ cup) heavy cream 360g (1.5 cups) sour cream or labaneh 35g (4.5 tbsp) flour 3 eggs Salt + vanilla (large pinch) Strawberry sauce: 110g (1/2 cup) sugar 500g strawberries Preparation: Crust: 1. Beat crackers until fine with a food processor or by hand 2. Melt the butter and add into the crackers along with the sugar and the salt and mix 3. Place into the springform pan and press it down using any flat object 4. Bake in the oven at 180c for 8-12 mins or until the edges are starting to brown 5. Allow to cool completely before pouring the batter Filling: 1. With a stand mixer, hand mixer, or a whisk, beat the cream cheese and the sugar until no lumps remain 2. Add the cream and mix until fully incorporated 3. Add the flour, sour cream (labaneh), vanilla & salt and mix until fully incorporated 4. Finally, add one egg at a time and mix fully before adding the next 5. Pour the batter into the readied springform pan and wrap the sides with aluminum foil (to keep water from seeping into the cheesecake) 6. In a large pan or deep baking sheet, place the cheesecake and pour hot water to a height of 4cm 7. Place in the oven at 180c for 1 hour, then turn off the oven and keep the cheesecake inside for another hour before removing (do not open the oven door) 8. Once out of the oven, allow it to cool to room temp then wrap and place in the fridge for at least 4 hours or overnight before eating Strawberry sauce: 1. Cut the strawberries into quarters and place into a medium saucepan along with the sugar 2. Allow the sugar and the strawberries to sit for 10 minutes (maceration) 3. On medium heat, cook strawberries until very soft and barely visible (around 10-15 minutes) 4. Bakpapier op een bakplaat en vorm mooie koekjes, verdeel ze daarna over je bakplaat en gooi in de oven voor 20 a 25 minuten. 3 Bastogne koeken helemaal klaar. Laat afkoelen, dan worden ze hard en verkruimel ze vervolgens in een keukenmachine. Ingrediënten Aardbeiensaus 500 gram aardbeien 200 gram geleisuiker 1 Snij al je aardbeien in vieren en doe ze in een ruime pan met al je gelei suiker erbij. Breng het langzaam aan de kook. Kookt het? Laat op laag vuur 4 minuten zachtjes bubbelen en haal daarna de pan van het vuur. Pureer heel kort even je saus met een staafmixer en laat je saus afkoelen. Ingrediënten bodem 90 gram ongezouten boter 180 gram koek (Ik gebruik zelf gemaakte koekjes) 1 el suiker 1 Verkruimel je koekjes in een blender samen met je boter en suiker. Klaar! 2 Oven voorverwarmen op 170 Graden Celsius. Bedek de bodem van je springvorm met bakpapier en druk je koekjesbodem mengsel goed aan op de bodem. Gooi vervolgens in de oven en bak voor 10 minuten. 10 minuten voorbij? Laat afkoelen op een rekje terwijl je begint aan de vulling van je cheesecake. Ingrediënten Cheesecake 900 gram Philadelphia/Mon chou 250 gr suiker 3 el bloem 1 zakje vanillesuiker 1 citroen (zest) 1/2 citroen waar je alleen de sap van gebruikt 3 eieren 1 eigeel 200 ml sour cream Snufje zout. 1 Oven voorverwarmen op 220 graden Celsius. Pak een keukenmachine met de “bisschop/vlinder” erop en gooi je roomkaas in je keukenmachine. Zet aan op lage stand zodat je roomkaas zacht wordt. Laat je machine gewoon op lage stand aan staan en gooi er je suiker, bloem en een snufje zout bij. Zorg dat je alles goed mengt en zorg ook dat je de zijkanten goed mee schraapt. 2 Haal je bisschop/vlinder eraf en doe je grote garde erop. Zet je machine weer aan en doe er je vanille suiker, zest, citroensap bij en laat mengen. Nu doe je 1 voor 1 je eieren erbij, dus wacht tot je ei opgenomen is door je mengsel en dan pas de volgende. Goed de bak schrapen en laat maar mengen. Gooi vervolgens je soul cream erbij en laat op lage stand mengen. Het mengsel moet luchtig en zijdezacht zijn. 3 Smeer je springvorm in met wat boter en pleur je cheesecake vulling in de springvorm. Vul een diepe bakplaat met water en zet in de oven, hiermee zorg je ervoor dat je cheesecake niet barst. Gooi je cheesecake nu in de oven en bak hem voor 10 minuten. Verlaag na 10 minuten de temperatuur van de oven naar 110 graden en bak je cheesecake nu voor 45 a 50 minuten. Nadat je dit hebt gedaan verhoog je je temperatuur tussen de 150 a 160 graden en laat je hem nog 20 a 25 minuten bakken. 4 Nu is de cake klaar maar wil je het romig hebben in het midden laat dan je cheesecake afkoelen met de ovendeur open, wil je hem wat steviger laat de ovendeur dan dicht. 2 uur laten afkoelen! 5 Na 2 uur gooi je voor het beste resultaat je cake in de koelkast en snij je hem pas de volgende dag in stukken maar ik heb trek en doe het gelijk. Snij je de cheesecake los van de zijkanten en haal de de springvorm eraf. Snij een stuk af, pleur er wat aardbeiensaus overheen en stop het in je mond.

嗨!大家好,我是 Cassandre, 今天的『食不相瞞』,我們要來跟大家分享一款歷久不衰的經典美式甜點紐約重乳酪起士蛋糕 (Classic New York Cheesecake)。 據說起士蛋糕源起於希臘,後來由古羅馬人傳了出來,也因此在全世界各地,都有不同口味與配方的起士蛋糕,其中紐約起士蛋糕一直都是我們的心頭好,我們特別喜歡它略帶酸甜的超濃郁乳酪口味,搭配用消化餅乾混合奶油做成的脆皮,吃起來滿口噴香,絕對是配茶與黑咖啡的良伴。 這份食譜不需要用到水浴法來烘烤,所以製作起來更為簡單了,也不容易產生裂紋,基本上它就是一盆到底,只要每個步驟都做到位,輕輕鬆鬆就可以端出細緻美味的起士蛋糕。希望大家會喜歡今天的影片,Enjoy! :) 這支影片還有無人聲的 #ASMR 版本: 🤍 - Classic New York Cheesecake 經典紐約起士蛋糕怎麼作呢? 下面是 經典紐約起司蛋糕的作法與食譜: 烤模尺寸:7吋圓模,直徑約為18cm 📌 烤模尺寸換算方式: 🤍 ✎ 材料/ Ingredients ☞ 脆皮 消化餅乾 200克 融化的無鹽奶油(unsalted butter) 80克 一小撮鹽之花(可省略) ☞ 蛋糕 奶油乳酪(cream cheese) 500克,室溫軟化 細砂糖 160克 低筋麵粉 15克 檸檬皮 1大匙 檸檬汁 13克 雞蛋 2顆 酸奶油(sour cream) 300克 ✎ 做法/ Instructions ☞ 脆皮 1. 用食物料理機將消化餅餅打成碎末,若家裡沒有料理機,也可以把餅乾放入塑膠袋裡,用擀麵棍壓碎 2. 把打好的麵包碎倒入打發碗中,並加入適量融化的無鹽奶油、一小撮鹽之花,攪拌到摸起來不會太濕的微濕沙狀,用力一捏可以塑形的質地 3. 在烤模底部跟內部周圍抹上一層薄奶油,然後在底部舖上事先剪好的圓形烘焙紙,內圍也要舖上烘焙紙 4. 舀一些餅乾屑在盤底,然後用平底的杯子或道具壓實,接著在內圍也舖上餅乾碎,同樣要壓實,整個烤模送進冰箱冰最少半小時。 ☞ 蛋糕 1. 取一個大的容器,加入奶油乳酪和糖,用手持攪器以中低速來攪打混勻,要打到摸不出砂糖的顆粒感 2. 加入檸檬皮、檸檬汁,並篩入麵粉,改用低速攪拌均勻 3. 加入兩顆雞蛋,一樣是用低速拌勻即可 4. 倒入酸奶油,同樣是以低速攪勻 5. 將麵糊倒入烤模中,輕輕抹平表面,並輕敲幾下以排出多餘空氣 6. 烤箱預熱至150°C,烘烤50-60分鐘 7. 烤好後,先不要自烤箱取出,把烤箱打開一個縫隙,讓蛋糕在烤箱中慢慢降溫一個小時,然後取出後再徹底放涼,最後冷藏6-8個小時 更詳盡的作法與 Tips,可以參考我們的食譜網站喔: 🤍 更多的食譜: 🤍 - #NewYorkCheesecake #起士蛋糕 #簡易食譜 本片是以 Panasonic Lumix GX85/GX80 4K 影片拍攝。 鏡頭: Panasonic LEICA DG SUMMILUX 15mm F1.7, Panasonic LUMIX G 25mm F1.7 ASPH. New York Cheesecake – 6 kişilik Malzemeler; Tabanı için; 130 gr yulaflı bisküvi – 1 paket 125 gr tereyağı – erimiş Kreması için; 400 gr taze krem peynir 120 gr toz şeker / 1 su bardağı 400 gr krema / 2 su bardağı 250 gr yoğurt 2 adet yumurta 2 yemek kaşığı mısır nişastası 1 paket vanilya ¼ adet limonun suyu Sosu için; 200 gr frambuaz 40 gr toz şeker - ¼ su bardağı 1 yemek kaşığı su Hazırlanışı; Kek kalıbınız için; 19 cm’lik kilitli kek kalıbınızın tabanına yağlı kağıt serin. Kek kalıbınızın kenarlarını tereyağıyla yağlayın ve yağlı kağıt serin. Ardından bir alüminyum folyoyla kek kalıbınızın dışını kaplayın. Tabanı için; Bisküvilerinizi rondonun içerisine alın ve parçalayın. Tereyağınızı eritin ve parçaladığınız bisküvilerin üzerine ilave edip çekmeye devam edin. Ardından hazırladığınız bisküvi katmanını tabana serin ve iyice bastırarak tabanı oluşturun. Derin dondurucuda 10 dakika bekletin. Kreması için; Bir karıştırma kabının içerisine krem peynir ve toz şekeri ekleyip bir spatula yardımıyla karıştırın. Krema, yoğurt, yumurta, mısır nişastası, vanilya ve limon suyunu içerisine ekleyip bir çırpma teli yardımıyla iyice karıştırın. Birleştirmek için; Hazırladığınız kremayı kilitli kek kalıbınıza ekleyip iyice yayın. 1 – 2 kere tezgahınıza vurun. Bu işlem hava kabarcıklarını yukarıya çıkartacaktır. Oluşan hava kabarcıklarını bir kürdan yardımıyla patlatın. Kek kalıbınızı fırın tepsinize alın ve fırına koyun. Fırın tepsinizin içerisine tabanını kaplayacak kadar sıcak su ekleyin ve 180 derecede önceden ısıtılmış fırında 30 dakika pişirin. Ardından fırınınızı 150 dereceye düşürün ve 30 dakika daha pişirin. Pişirme işleminiz bitince fırınınızı kapatın ve kapağını açmadan cheesecake’inizi 1 saat dinlendirin. Cheesecake’inizi soğutmak için önce oda sıcaklığına getirin ardından buzdolabına alın ve 6 saat soğutun. Sosu için; Bir sos tenceresine donuk frambuaz, toz şeker ve suyu alın. Ocağın altını açın ve karıştırın. Her şey birbirine karışana kadar pişirin. Süzgecinizi bir karıştırma kabına yerleştirin ve pişirdiğiniz sosu içerisine ekleyip spatula yardımıyla ezerek süzün. Hazırladığınız sosu buzdolabında soğutun. Servis etmek için; Soğuttuğunuz cheesecake’inizi kalıbından çıkartın. Ardından dilimleyerek servis edeceğiniz tabaklara pay edin.
